Ingredients
- Potato — 400 g
- Butter — 300 g, fridge-cold
- Nutmeg, ground — to taste
- Salt — to taste
- White pepper — to taste
Instructions
- Peel and boil the potatoes in salted water until tender.
- Let cool slightly, then pass through a vegetable mill — or mash very finely.
- Set a pan over low heat and add the potato.
- Top with the cold butter and press it down with a silicone spatula.
- Massage the potato with the spatula until the butter melts in. It shouldn’t melt from the heat alone.
- Add salt, pepper, and nutmeg; stir.
